Preheat oven to 330 degrees Fahrenheit (about 165 degrees Celsius). Make sure you know how to check that the oven is being heated correctly. Some ovens make noises when preheating. If your oven doesn't indicate a preheat time, use an oven thermometer to make sure the oven is fully heated. As an individual cake doesn't take long to mix, it's a good idea to wait a few minutes before turning on the oven and starting your cake. This way, you can put the cake in the oven after preparing the ingredients.
Find an aluminum foil container and spray it with nonstick spray.
Soften the butter in the microwave. If you're taking it straight from the fridge, you'll need to soften the butter. Butter at room temperature has softened. This recipe calls for slightly softened butter. Put butter in a cup. Microwave for 10 to 15 minutes. You don't want to add melted butter to this recipe. You want the butter to soften slightly. Start microwaving your butter for 10 seconds, then check it. You should also keep an eye on butter while it's in the microwave. Make sure your butter doesn't start to melt.
Add sugar and eggs. Whisk sugar and eggs until you have a fluffy mixture. You don't need to use an electric mixer. You can just use a spoon or fork. It doesn't take more than 30 seconds a minute when you're using a small amount of ingredients.
Add sour cream and vanilla extract. Again, be sure to stir until the mixture is homogeneous and creamy. Whisk eggs and sugar with the same spoon. Be sure to stir until you have a smooth, creamy batter.
Add dry ingredients. Dry ingredients include flour and baking soda. Put these in your cake. You may want to add a small amount of dry ingredients as this makes it easier for them to blend into the batter.
Heat the microwave until the cake is cooked. The exact bake time depends on your microwave. Bake the cake for 1 minute and then check again. If you need to cook longer, cook for another 10 seconds. Keep checking the cake every 10 seconds until it's cooked. Your cake is ready, you can stick a fork in it and get it clean. The cake will be very hot when you take it out of the microwave, so be sure to let it cool for a few minutes before eating. A cupcake is done.
